10 Minute Tomato Pasta!

Kid Friendly Dinners!

This is my go to dinner when I’m too tired to cook. There is minimal prep work required for this recipe and can be cooked using just two dishes; a large pot and a pasta strainer.

Ingredients

• 1/2 tbs of olive oil

• 2 tbs of minced garlic

• 1/2 tsp of Italian seasoning

• 1/4 tsp of red pepper (optional)

• 1/2 tsp of salt

• 1/2 tsp of black pepper

• 4oz of cream cheese

• 1/4 cup of shredded parm

• 2 cups of spinach

• 1 28oz can of petite diced tomatoes

1 bag of frozen cheese tortellini

Steps

  1. Bring water to a boil in a large pot. Once boiling, add the frozen cheese tortellini. Check package for preferred boiling time. Once the tortellini are finished, drain them and put them aside.
  2. Using the same large pot, add 1tbs of olive oil with 2 tbs of minced garlic over medium heat. Let cook for 30 seconds then add in the canned tomatoes, do not drain. Let simmer for 2 minutes, then add 4oz of cream cheese. Stir until the cream cheese is blended in.
  3. Add your salt, pepper, Italian seasoning, and optional red pepper. Bring the temperature to low-medium heat and add 2 cups of spinach. Stir and let the spinach cook for about 3 minutes.
  4. Stir in your cheese tortellini and top with shredded parmesan, enjoy!
